Is it possible to set the cell of a table to be a bold font?
I've tried setCellAttributes() in the Dialog class and it
appears that I can only change the color of the text.

Unfortunately this is not possible for the moment.

There is already a registered feature request to base setCellAttributes on styles (#Fz.2217) but it is not implemented yet.
I will add you to the list of the requesters.
